Time is the real secret of the elegance of Riserva del Nonno spumante, and our underground cellars, the historic Cattedrali Sotterranee World Heritage Site, are the setting that brings it to life.
Re-fermentation in the bottle starts only in the spring following the harvest; then it waits for at least 30 months to age in the bottle over the traditional racks; 60 days are devoted to remuage – carried out strictly by hand – on pupitres, followed by dégorgement à la glace with the addition of a liqueur d’expédition.
The characteristic notch on the base of the bottle is a reference for the cellarmen during the remuage phase through which the spumante bottles are turned to cause the residual yeasts to deposit, and shows the time that has passed in the ageing process.
The taste is a clear indicator of quality: it is velvety and contains both acidity and freshness in a unique harmony, leaving perfumed notes of bread crust, floral scents and a grand finale of honey.
